This week's recipe features gnocchi with pancetta and peas in a Gorgonzola cheese sauce. This recipe is not only quick and easy, but delicious. I recommend using a nonstick pan for easy cleanup. Prep and cook time: 10 minutes
What you will need:
1 tablespoon olive oil
1 bag Trader Joe's Gnocchi al Gorgonzola (or any 16 oz bag of frozen gnocchi with cheese from your local grocery store).
8 oz frozen peas
1 nonstick pan
- Put olive oil in pan and place over medium heat until pan is hot (about 1 minute).
- Add peas and pancetta and cook 4 minutes, stirring occasionally.
- Add all of the gnocchi and reduce heat to medium low.
- Cook until gnocchi is warm all the way through and stir often so as not to burn the cheese (about 5 minutes).
- Spoon into bowls and serve (serves 2)
